Common biscuit forming machines on the production line of biscuit factories include punching machines, rolling machines, rolling machines, etc. We will introduce them in detail from the structural principle and the applicable biscuit dough types. At the same time, we also explain their respective advantages and disadvantages and their respective production efficiency:

Structural Principle

  1. Punching biscuit forming machine: equipped with a punching die that performs linear reciprocating motion, punching out patterned biscuit blanks from the noodles sent by the dough sheet machine. According to the movement mode of the punching die and the noodles, it can be divided into intermittent punching type and swing punching type. The former is characterized by continuous movement of the punching die and intermittent movement of the noodles, and the latter has the punching die and the noodles moving synchronously.
  2. Rolling biscuit forming machine: composed of printing, cutting, and demoulding rollers, printing, cutting, and demoulding the noodles output by the dough sheet machine, and sorting and conveying the biscuit blanks and edge materials.
  3. Rolling biscuit forming machine: composed of feed rollers, mold rollers, demoulding rollers, and conveyor belts, rolling the pastry dough into biscuit blanks, and completing demoulding and conveying operations.

Applicable Dough Types

  1. Pressing type biscuit forming machine: suitable for various doughs, including hard dough, shortbread dough, and soda dough, but different doughs require different molds.
  2. Rolling type biscuit forming machine: mainly used for hard dough and soda dough, which can cut the dough into various shapes and sizes with high precision.
  3. Rolling type biscuit forming machine: mostly used for processing high-fat shortbread dough. After replacing the printing mold roller, it can also be used as a forming machine for pastries such as walnut shortbread.

Advantages and disadvantages

Stamping type biscuit forming machine

Advantages: can produce biscuits with complex patterns and shapes, the biscuit blanks are of good quality, and it is easy to match with continuous baking ovens to form an automatic biscuit production line.

Disadvantages: may produce more side materials, and sometimes the dough may be deformed or unevenly stressed during the stamping process.

Rolling type biscuit forming machine

Advantages: high production efficiency, can continuously cut out biscuit blanks, less side materials, the cut biscuit blanks are regular in shape and accurate in size.

Disadvantages: the shape changes of the cut biscuits are relatively limited compared to the stamping machine.

Rolling biscuit forming machine

Advantages: simple structure, stable operation, no edge material, suitable for mass production of high-fat crispy biscuits.

Disadvantages: The types of biscuits that can be produced are relatively limited, mainly suitable for biscuits with simple shapes and patterns.

Production Efficiency

  • Punching biscuit forming machine: The intermittent punching machine has a relatively slow production speed, generally dozens to hundreds of times per minute, and the swing punching machine has a faster speed, which can meet the needs of medium and high production capacity.
  • Rolling biscuit forming machine: high production efficiency, can cut out hundreds of biscuit blanks per minute, suitable for large-scale production.
  • Rolling biscuit forming machine: The production speed is relatively stable, generally dozens to hundreds of biscuit blanks can be produced per minute, depending on the machine model and equipment parameters.
